Spinach Salad with Maple Lemon Dressing

For those who grew up in the 60s-80s, Popeye seems to be an icon among early superheroes. Mainly relying on a can of spinach to get back at the cartoon’s lone bully, Brutus, Popeye has also been an ally-of-sorts for dads and moms who find it challenging to convince their kids to eat veggies. I’ve seen how moms and dads struggle in pulling all sorts of tricks just to make their  children eat vegetables.

In my case, I feel fortunate that I do not have to sweet talk my kids into eating veggies. They like veggies so much that they’re even helping me grow spinach and carrots right at our own patio!

Other than Popeye (this seems to be dated too 😀 ), I guess the best way of enticing kids to eat greens is to start them early on.  The recipe below is just one of my kids’ favorites. Try it and enjoy!

Spinach Salad with Maple Lemon Dressing

spinach ingredients

Ingredients:
Spinach leaves (young leaves preferred)
2 tablespoons of maple syrup
1 piece of lemon
2-3 tablespoons of olive oil
1/4 cup chopped walnuts
Salt and pepper

Directions:
1. Microwave lemon for 20 seconds to make squeezing the juice easier.
2. Whisk the lemon juice and olive oil in a bowl.
3. Add maple syrup then salt and pepper to taste.
4. Pour the dressing into spinach leaves then toss. Add chopped walnuts and serve.
